Potatoes for Thanksgiving DinnerHoliday menu planning time has arrived once again! Although I usually served my Grandma Nordine’s mashed potatoes for special occasions including holidays, my husband and I decided to come up with a brand new recipe list when we sat down to do our holiday menu planning one Thanksgiving a few years ago. For one of our Thanksgiving dinner side dishes that year, we decided to make a whipped potato casserole that is pretty similar to my grandma’s mashed potatoes with a few minor changes. I still love my grandmother’s recipe the best, but our attempt at a new recipe was definitely not a failure. Plus, and most importantly, our recipe for whipped potato casserole is so simple to make!

Ingredients

  • 5 pounds of white potatoes
  • 1/2 cup of butter (1 stick)
  • 1 1/4 cups of half and half
  • 8 ounces of whipped cream cheese with chives
  • 1 tablespoon of garlic salt
  • 1 teaspoon of nutmeg

Directions

  1. Wash and peel the potatoes.
  2. Chop the potatoes into small pieces.
  3. Boil the potatoes in water for half an hour or until fork-tender.
  4. Drain the cooked potatoes.
  5. Combine the butter, half and half, cream cheese, garlic salt, and nutmeg in a large mixing bowl.
  6. Add the drained potatoes to the mixing bowl.
  7. Whip the potatoes until the seasoning is thoroughly mixed in and the potatoes are a mixture of mashed and chunky.
  8. Grease a glass baking pan with cooking spray.
  9. Pour the whipped potatoes into the baking pan.
  10. Cover the baking pan with aluminum foil until ready to bake.*
  11. Preheat the oven to 350º.
  12. Bake uncovered for thirty minutes or until hot and lightly browned.
  13. Serve immediately.
  14. Refrigerate any unused portion.

*The whipped potatoes may be refrigerated for a couple of days before cooking.

I love potatoes. And, although I still prefer my grandmother’s mashed potato recipe, the whipped potato casserole that I made as one of my Thanksgiving dinner side dishes a few years ago was not half bad. (The casserole even heats up well too, so no leftover potatoes went to waste in my house that holiday season!) As the holiday menu planning season approaches, I must admit that I will most likely be making my grandma’s mashed potatoes for Thanksgiving this year. However, I did add this whipped potato casserole recipe to my recipe shelf for less special occasions. As a side dish that is easy to make and that can be made ahead of time, this recipe gets a thumbs up in my cook book!
